Sol & Roche : Rully "Les Maizières"

1) Rully Les Maizières 2024 The Les Maizières vineyard, located in Rully, is situated on a hillside terroir with clay-limestone soils that are very rich in limestone. The fine clays impart a savory texture that balances a lovely minerality, enhanced by an eastern exposure. Made from old Chardonnay vines over 60 years old, planted at 10,000 vines per hectare and limited to 35 hl/ha, this wine comes from a harvest carried out on September 9, 2024, at perfect ripeness. Vinification involves direct pressing of whole clusters and cold settling. Fermentation and aging take place in 228-liter Burgundy barrels. Malolactic fermentation is complete. The wine is neither tartaric acid-stabilized nor filtered, and undergoes only a light bentonite fining to preserve its character. 2) Chablis 2024 This Chablis perfectly expresses its terroir thanks to a blend of flowers and white fruits on the nose. The Chardonnay grapes used to make it grow on limestone marl soils, offering slightly smoky and very elegant notes. On the palate, the texture is fine and “powdery,” leaving a mineral sensation and a finish that makes you want to come back for more. Aged half in vats and half in barrels, it strikes a perfect balance between freshness and complexity. It is an airy white wine that is very classic for its region. 3) Mâcon Village 2024 Produced from very old vines over 60 years old located in Péronne, this Chardonnay is a model of balance. It offers delicious aromas of ripe yellow fruit, without any heaviness. The palate is both generous and delicately mineral, offering a classic interpretation of its limestone soil. Aged mainly in stainless steel vats, it retains a great deal of clarity and purity. This is a versatile and very harmonious white wine. 4) Aligoté 2023 This white wine is made from the Aligoté grape variety in the village of Chitry-le-Fort. Produced from vines aged between 35 and 45 years old, it benefits from a clay-limestone terroir that gives it a beautiful authenticity. It is vinified and aged entirely in stainless steel vats to preserve all its freshness and natural liveliness. With an alcohol content of 12.5%, it is a light and balanced wine. It is the ideal choice for a classic and refreshing aperitif, faithful to the Burgundian tradition. 5) Pinot Noir 2023 x2 This red wine comes from the Irancy region and showcases the famous Pinot Noir grape variety. The grapes are harvested from 45-year-old vines and carefully vinified in wooden vats. It is aged for 12 months in traditional oak barrels, giving it an elegant structure without being overly woody. On tasting, it reveals a more assertive character with 13.5% alcohol. It is a terroir red wine, perfect for accompanying convivial dishes.
