85% Chardonnay, 15% Pinot Noir Wine of Origin: Robertson Winemaker: John Loubser At Silverthorn Wines we make a Brut Nature (less than 3g/l residual sugar) exclusively for the CWG auction. This year we present Crazy Diamond. The Chardonnay block used for this wine was planted in 1991. The soils are ancient shale and limestone (400 million years old). The base wines are 100% barrel fermented and aged to enhance complexity. Tasting Notes: The wine opens with upfront vibrant citrus and a delicate roasted almond aroma. The palate is elegant, with a delicate mousse and a lingering finish. It is a Cap Classique that is complex yet restrained. Will age beautifully. For optimal enjoyment drink from 2027 onwards.
