100% Cabernet Sauvignon Wine of Origin: Stellenbosch Winemaker: Miles Mossop This wine is a bottling of the best Cabernet Sauvignon vineyard used in the Max blend. The vineyard is situated high in the Polkadraai Hills and is planted in soils of granitic origin. It gives a pure expression of Stellenbosch Cabernet Sauvignon. The grapes are picked at a ripeness that expresses the finesse and purity typical of this part of Stellenbosch while retaining freshness. The wine is naturally fermented in a small wooden open-top vat and matured in 225 litre French oak barrels for 22 months, with 50% new oak. Tasting Notes: The wine displays aromas of bramble fruits with notes of cocoa, tobacco leaf and dried herbs. The palate is full and rich, showing layers of berry fruits, olive tapenade and spice. Fine granular tannins contribute to the long finish, adding structure and persistence to the wine. Drinking beautifully now and will continue to do so for a further 10 to 15 years.
