Fred Laing's XOP series debuted in 2014, several months after the division of Douglas Laing & Co.'s assets between the two Laing brothers. XOP stands for Xtra Old Particular and refers to the best single malt and single grain whisky barrels resting in family warehouses. The Glenallachie 30 years old on display here is a whisky distilled in February 1992 and aged for three decades in a refilled bourbon cask (no. DL 16979). Bottled in December 2022 with barrel strength (47.3% abv) and without cold filtration in a limited edition of 190 bottles. Built in 1967, GlenAllachie Distillery is based in Speyside. Since 2017, it has been part of a group of private investors led by Billy Walker. (Manufacturer's tasting note.) Nose: the nostril-pleasing smell of raspberry jam on warm, buttery buns and juicy barley. Palate: rich, creamy sweetness on the palate, peaches in syrup, puff pastry and subtle oak spice. Finish: long, full of sweetness of tropical fruits, soon replaced by barley malt and homemade pastries.
