Vincent Paris is a talented Rhone winemaker located at the southern tip of the village of Cornas. His story begins thanks to his grandfather who gave him a hectare of vineyard in 1997. Ten years later, he bought La Geynale, a very beautiful plot belonging to Robert Michel. Today, he operates ten hectares, the majority in the Cornas appellation, complemented by Saint Joseph and Vin de Pays. He tends his vines in a reasoned way, as naturally as possible (without insecticides or chemical fertilizers), and is inspired by the incredible slope of his plots to name his vintages according to their inclination: Granit 30 and Granit 60. Vincent Paris produces wines of beautiful purity, with gourmet and generous fruit, bottles that we can afford to open in their youth, on the fruit, as well as after a long aging. His Cornas wines are regularly praised by professional critics, including La Revue du Vin de France and Bettane et Desseauve. About the vintage The Syrah that composes this vintage was cultivated manually on steep south-facing slopes, a vine acquired by the winemaker in 2007. Once the harvest is done by hand, the berries macerate cold, at 12 degrees, for a week. Then they undergo fermentation with only native yeasts, and are pigeaged twice a day (morning and evening). The wine is then aged for about a year in oak barrels without new wood, in order to preserve fruit aromas. At bottling, the wine is fined to clarify and refine it. We discover a nectar with an extremely complex deep black color with aromas of black fruits and spices. The wine is dense and deep, enhanced by a beautiful mineral texture. Its tannins, present, are fine and harmonious. Vincent Paris signs a beautiful vintage to be enjoyed with bavette with shallots and its potato gratin, or a pork tenderloin with porcini mushrooms.
